Jalisco is the hometown of the owners of “El Agave Taqueria,” a region renowned for its distinctive hard liquor, “Tequila,” which is derived from the blue agave plant featured in the restaurant's logo.


Tequila is a unique hard spirit originating from a small area in Jalisco, crafted primarily from the blue agave plant. It holds the distinction of being the most celebrated type of mezcal produced in Mexico, and the only mezcal manufactured on an industrial scale with rigorous standards. The name is derived from a quaint town located northwest of Guadalajara, at the heart of the blue agave's native region.


Historically, the plant was utilized in pre-Hispanic times to create a ceremonial beverage. Spanish settlers transformed the sweet core of the mature plant, known as a piña (which translates to pineapple), into a fermented and distilled drink. José Antonio Cuervo was granted the first official permission to produce and sell the liquor in 1758, and in 1888, the Sauza family received the inaugural license for export.
